Here comes the history bit! The start of coffee drinking as we know it can be traced all the way back to around the 9th century in the Ethiopian coffee forests. Legend has it that a humble goatherd named Kaldi is said to have noticed that his herd became much livelier and would not sleep when they ate the beans from a certain tree. Upon telling his tale to an abbot, experiments were made using the beans to make a drink that had the power to keep people awake – very handy if you happened to be a monk who engaged in long periods of evening prayer! Mass coffee cultivation and trade began on the Arabian Peninsula and by the 15th century, coffee was being grown in the Yemeni district of Arabia, while by the 16th century it was known in Persia, Egypt, Syria, and Turkey. Starting in the Ottoman Empire during the 15th century, the art of roasting the raw, green coffee beans to produce the rich, tantalising flavours we all know and love quickly gained attention, with the earliest recorded implements used being thin pans made of metal or porcelain. Over the centuries, different types of beans and techniques have been tried, tested, and developed, ensuring roast coffee has many distinctive blends and tastes. However, one of the most successful methods which remains today is convection roasting, as favoured by the coffee gurus at PureGusto. Now comes the science! Unlike conductive roasting – which uses metaldrum roasters and leaves coffee beans scorched on the outside and undercooked on the inside, resulting in an uneven coffee with a bitter, sour taste – convection roasting sees the green coffee beans baked using hot air to surround the beans with warmth. It has the opposite effect to the traditional method. The hot air encourages heat to build up in the centre of the beans which then slowly radiates out to the exterior, roasting the beans from within. The resulting coffee tastes smooth and remarkably consistent across different batches of beans. The comparatively low temperature of convection roasting reaches approximately 260°C (500°F) and has a gentle effect on the coffee. As it slowly roasts the entire coffee bean from the interior, it encourages enticing, aromatic flavours to fully develop.
