This not only means superior flavour and texture, but it is also healthier, higher in vitamins and minerals, and lower in overall fat and saturated fat. Having been involved in farming in the past, Ian Chatfield is very aware of good husbandry with regards to livestock. He knows their local farmers and how passionate they are about their farms and animals. Free range, grass fed, and where possible, native breeds, coupled with Ian Chatfield’s dry aging process are crucial. Ian Chatfield does not ‘supermarket age’ beef in bags without oxygen, it dry ages, carefully monitoring the fridge temperature and humidity. The beef is turned over daily for up to four weeks, and up to 20-30% of the weight can be lost by evaporation as the enzymes break down the connective tissue of the carcass, greatly reducing cooking shrinkage and also enhancing flavour. Some supermarket meats can carry up to 30% water – This weight will disappear during cooking along with any flavour that is left. Of course, supermarkets can and do add ‘chemicals’ to the meat to try to stop this evaporation. Some of Ian Chatfield’s butchers have been in the trade for 40 years, meaning a wealth of experience and knowledge, and they are always on hand to answer any questions about products and to provide great cooking advice, as well as prepare the meat just the way the customer likes it.
