Originally owned by an independent fish wholesaler and with a reputation for serving up superior quality fish and seafood, Chapman’s of Canterbury had new life breathed into it upon being acquired by executive chef, Byron Hayter, in 2020 and has since taken an exciting new path on its culinary journey. Byron’s wealth of experience in the luxury fine dining industry is reflected in his work, with the menu being simple, yet exciting and a true celebration of the ingredients. Taking inspiration from locally sourced ingredients, the sharing-plate menu is innovative, yet unfussy, with authentic dishes boasting a modern twist. Using fresh, locally sourced ingredients, Byron and his team bring seasonal dishes that combine quality and flavour, while celebrating the finest seafood that Kent has to offer. Ingredients such as oysters, lobster, prawns, scallops and a variety of fish have a distinctly ‘eastern twist’ being married with the more exotic soy, ginger, panko breadcrumbs and chilli. There are also old favourites on there, such as lobster thermidor, steamed mussels or the wagyu steak, to ensure that there is a dish to suit all tastes. Inside the restaurant, the building is steeped in history and Byron has been sympathetic to the cause, embracing the old with the new. Original 15th century beams are complemented with a contemporary design and an easy-going ambience. The open plan restaurant and marbletopped bar greet the visitor upon arrival, whilst upstairs a beautifully decorated mezzanine draped in greenery provides an elegant, cosy and intimate space that is perfect for private dining. Discerning diners couldn’t agree more, and Chapman’s of Canterbury is no stranger to receiving a glowing five-star review from a delighted customer. One happy visitor exclaimed: “We like our seafood and we loved it here!” The food was first class, understated but charming service and good price – what’s not to like?” Another agreed wholeheartedly that Chapman’s was the place to visit for fine dining and fresh seafood: “Amazing food! Far exceeded my expectations and we all can’t wait to return.
